  • 1 large poblano pepper

  • 1 small red onion, diced

  • 2 jalapeños, seeds removed and finely diced

  • ½ cup fresh cilantro, finely chopped

  • 1 lemon, juiced

  • 1 lime, juiced

  • 2 teaspoons ground cumin

  • 1 teaspoon sea salt


Instructions

  1. Prepare the Corn: Cook frozen corn according to package instructions. Let it cool. Optionally, sauté in a dry pan to add light char and extra flavor.

  2. Roast the Poblano: Place poblano pepper over an open flame or under a broiler, rotating until all sides are blackened (about 3–4 minutes).

  3. Steam the Pepper: Place in a bowl, cover, and let sit for 10 minutes. Then peel off the skin, remove seeds, and finely chop.

  4. Mix Ingredients: In a large bowl, combine corn, chopped poblano, diced red onion, jalapeños, and cilantro.

  5. Add Citrus & Seasoning: Pour in lemon and lime juice, sprinkle cumin and salt. Toss to combine well.

  6. Chill & Serve: Let the salsa sit for at least 15 minutes before serving. Best served chilled with tortilla chips or as a topping.

Notes

For extra smokiness, char the corn in a skillet or on a grill.

Prefer less heat? Use just one jalapeño or substitute with diced green bell pepper.
