Description

A refreshing twist on the classic mojito, this Coconut Mojito blends creamy coconut, zesty lime, and fresh mint for the ultimate tropical cocktail. Easy to make, incredibly satisfying, and perfect for warm-weather vibes.


Ingredients

  • 8 fresh mint leaves

  • 1½ ounces white rum (or coconut rum like Malibu)

  • 1 lime, juiced

  • 2 ounces cream of coconut (¼ cup)

  • Ice (as needed)

  • *Soda water (club soda), for topping

  • Mint sprigs (for garnish)

  • Lime wheels (for garnish)

For Sugar Lime Rim (Optional):

  • Zest of 1 lime

  • 2 tablespoons sugar

  • Pinch of kosher salt


Instructions

  1. Rim the glass (optional):
    Mix lime zest, sugar, and salt on a plate. Run a lime wedge around the rim of your glass, then dip into the mixture. Fill glass with ice.

  2. Muddle the mint:
    In a cocktail shaker, lightly muddle mint leaves to release flavor.

  3. Add liquids:
    Pour in rum, fresh lime juice, cream of coconut, and ice.

  4. Shake:
    Shake vigorously for 10–15 seconds to chill and blend.

  5. Strain and top:
    Strain into your prepared glass. Top with soda water.

  6. Garnish:
    Add a sprig of mint and a lime wheel for the perfect finish.

Notes

For a non-alcoholic version, swap the rum with coconut water or flavored sparkling water.

If using Malibu, reduce cream of coconut to avoid oversweetening.
