Instructions
-
Season and Sear the Chicken:
Mix garlic powder, onion powder, salt, and pepper in a small bowl. Rub evenly over the chicken. Heat olive oil and butter in a skillet over medium-high heat. Sear the chicken 3–4 minutes per side until golden. Do not cook through. Reserve drippings. -
Prepare the Sauce Base:
In the Crock Pot, whisk together chicken broth and cornstarch until smooth. Stir in heavy cream, garlic, Italian seasoning, red pepper flakes, paprika, salt, and pepper. -
Assemble in Crock Pot:
Place seared chicken into the sauce. Drizzle reserved skillet drippings over the chicken. Sprinkle sun-dried tomatoes on top. -
Slow Cook:
Cover and cook on low for 6–7 hours. Avoid high heat to prevent curdling. -
Finish the Sauce:
Remove chicken temporarily. Whisk Parmesan cheese into the sauce until smooth and melted. Return chicken and coat thoroughly. -
Garnish and Serve:
Sprinkle chopped basil over the chicken. Serve hot over pasta, mashed potatoes, or crusty bread.
