  • 4 boneless, skinless chicken breasts

  • ½ teaspoon salt

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ¼ teaspoon black pepper

  • 2 tablespoons olive oil

  • 2 tablespoons butter

For the Sauce:

  • 1½ cups chicken broth

  • 3 tablespoons cornstarch

  • 1 cup heavy cream

  • 4 cloves garlic, minced

  • 1½ teaspoons Italian seasoning

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon red pepper flakes

  • ½ teaspoon paprika

  • ⅓ cup chopped sun-dried tomatoes, drained

  • ½ cup freshly grated Parmesan cheese

  • 10 fresh basil leaves, chopped


Instructions

  1. Season and Sear the Chicken:
    Mix garlic powder, onion powder, salt, and pepper in a small bowl. Rub evenly over the chicken. Heat olive oil and butter in a skillet over medium-high heat. Sear the chicken 3–4 minutes per side until golden. Do not cook through. Reserve drippings.

  2. Prepare the Sauce Base:
    In the Crock Pot, whisk together chicken broth and cornstarch until smooth. Stir in heavy cream, garlic, Italian seasoning, red pepper flakes, paprika, salt, and pepper.

  3. Assemble in Crock Pot:
    Place seared chicken into the sauce. Drizzle reserved skillet drippings over the chicken. Sprinkle sun-dried tomatoes on top.

  4. Slow Cook:
    Cover and cook on low for 6–7 hours. Avoid high heat to prevent curdling.

  5. Finish the Sauce:
    Remove chicken temporarily. Whisk Parmesan cheese into the sauce until smooth and melted. Return chicken and coat thoroughly.

  6. Garnish and Serve:
    Sprinkle chopped basil over the chicken. Serve hot over pasta, mashed potatoes, or crusty bread.

Notes

Dairy-Free Version: Use cashew cream instead of heavy cream and nutritional yeast instead of Parmesan.
