Description

This comforting beef tips recipe features tender seared beef simmered in a flavorful homemade gravy made with red wine, herbs, and aromatics. Perfect over mashed potatoes or noodles.

For the Beef:

  • lbs (680g) sirloin tips or stew meat, trimmed and cut into -inch pieces

  • 3 tbsp all-purpose flour (or cornstarch for gluten-free)

  • 3 tbsp olive oil, divided

Spice Blend:

  • 1 tsp light brown sugar

  • ½ tsp fine sea salt

  • ¼ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp smoked paprika

  • ½ tsp mild chili powder

For the Gravy:

  • 2 tbsp unsalted butter

  • 1 small yellow onion, finely diced

  • 3 garlic cloves, minced

  • ¼ cup (60ml) dry red wine (or beef broth)

  • 2 cups (480ml) low-sodium beef broth

  • 1 tbsp concentrated beef stock paste (or 1 crumbled bouillon cube)

  • 1½ tsp Worcestershire sauce (or tamari for gluten-free)

  • ½ tsp dried thyme

  • ½ tsp dried rosemary, crushed

  • 1 tsp onion powder

  • ½ tsp garlic powder

  • 3 tbsp cornstarch mixed with ¼ cup (60ml) cold water

  • 1 tbsp cold butter (optional)


Instructions

  1. Combine spice blend in a small bowl. Toss beef with the spices, then coat with flour.

  2. Heat 2 tbsp oil in a large skillet over medium-high. Sear beef in batches for 1–2 minutes per side. Transfer to a plate.

  3. Reduce heat to medium. Add remaining oil, butter, and onion. Cook 4–5 minutes until soft. Stir in garlic and cook 30 seconds.

  4. Deglaze with wine or broth. Simmer 2 minutes to reduce.

  5. Add broth, beef stock paste, Worcestershire, thyme, rosemary, onion powder, and garlic powder. Bring to a gentle boil.

  6. Stir in the cornstarch slurry. Cook 2–3 minutes until thickened.

  7. Return beef and juices to the skillet. Simmer on low, partially covered, for 10–12 minutes.

  8. Swirl in cold butter before serving for a velvety finish.

Notes

For gluten-free, use cornstarch and tamari.

Add mushrooms with the onions for more depth.

Store leftovers in the fridge for 4 days or freeze for 3 months.
