Description

This Dirty Rice Recipe brings authentic Southern comfort to your table with a spicy Creole twist. Made with chicken livers, pork sausage, and the holy trinity of vegetables, it’s a hearty one-pot meal full of bold, savory flavor.


Ingredients

  • 1 ½ cups basmati rice

  • 2 tbsp vegetable oil

  • 8 oz chicken livers, trimmed

  • 1 lb bulk pork sausage

  • 1 onion, finely chopped

  • 1 green bell pepper, diced

  • 1 red bell pepper, diced

  • 1 tbsp minced garlic

  • 1 tbsp chopped jalapeño chile

  • ¼ cup Worcestershire sauce

  • 2 bay leaves

  • 1 tbsp chopped fresh thyme

  • 2 tsp black pepper

  • 1 tsp kosher salt

  • ½ tsp paprika

  • Pinch of cayenne pepper

  • 4 green onions, chopped (white and green parts)


Instructions

  1. Rinse the rice under cold water 4–5 times until the water runs clear. Cook in a pot with 1 inch of water over the rice, simmer covered for 15–18 minutes. Fluff and set aside.

  2. In a large skillet, heat oil over medium-high heat. Add sausage and chicken livers. Cook for 6–8 minutes, breaking apart meat, until browned and cooked through. Transfer to a plate.

  3. In the same skillet, sauté onion, bell peppers, garlic, and jalapeño for 8–10 minutes until softened and slightly caramelized.

  4. Dice the cooked chicken livers. Return all meat to the skillet.

  5. Add the rice, Worcestershire sauce, bay leaves, thyme, black pepper, salt, paprika, cayenne, and green onions. Mix well.

  6. Reduce heat to low and partially cover. Let simmer for 12–15 minutes, stirring occasionally. Discard bay leaves.

  7. Serve hot, garnished with extra green onions.

Notes

Rinse rice thoroughly to prevent stickiness.

Adjust cayenne and jalapeño for milder or spicier versions.

Can substitute livers with mushrooms for a vegetarian-friendly adaptation.
