Description

This hearty ground turkey casserole recipe is packed with lean protein, fiber-rich brown rice, black beans, corn, and melted cheese—perfect for a cozy family dinner or weekly meal prep.


Ingredients

  • 2 teaspoons olive oil

  • 1 pound lean ground turkey

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1½ teaspoons ground cumin

  • 1 teaspoon chili powder

  • ¾ teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon ground pepper

  • 2 cups cooked brown rice

  • 3 ounces canned diced green chiles

  • 1 (14-ounce) can petite diced tomatoes

  • 1½ cups salsa (your favorite kind)

  • 1 cup canned reduced-sodium black beans, drained and rinsed

  • ¾ cup corn kernels

  • ¼ cup minced cilantro

  • ½ cup grated Monterey Jack cheese


Instructions

 

  1. Preheat oven to 350°F (175°C). Lightly grease an 11×7-inch baking dish.

  2. Heat olive oil in a large skillet over medium heat. Add ground turkey and onion. Sauté until turkey is browned and onion is tender, about 5–7 minutes.

  3. Stir in garlic, cumin, chili powder, paprika, salt, and pepper. Cook for 1 minute to bloom the spices.

  4. Remove from heat and stir in brown rice, green chiles, tomatoes, salsa, black beans, corn, and cilantro.

  5. Transfer to the baking dish and top with grated Monterey Jack cheese.

  6. Bake uncovered for 20–25 minutes, or until cheese is melted and casserole is bubbly.

  7. Garnish with fresh cilantro, avocado, or lime wedges before serving.

Notes

Swap turkey for ground chicken, beef, or plant-based meat for variation.

Use pepper jack or a Mexican cheese blend for more spice.

Can be made ahead and stored in the fridge or freezer.

Reheat at 325°F until heated through.
