2 cups cooked brown rice

3 ounces canned diced green chiles

1 (14-ounce) can petite diced tomatoes

1½ cups salsa (your favorite kind)

1 cup canned reduced-sodium black beans, drained and rinsed

¾ cup corn kernels

¼ cup minced cilantro

½ cup grated Monterey Jack cheese
Instructions

Preheat oven to 350°F (175°C). Lightly grease an 11×7-inch baking dish.

Heat olive oil in a large skillet over medium heat. Add ground turkey and onion. Sauté until turkey is browned and onion is tender, about 5–7 minutes.

Stir in garlic, cumin, chili powder, paprika, salt, and pepper. Cook for 1 minute to bloom the spices.

Remove from heat and stir in brown rice, green chiles, tomatoes, salsa, black beans, corn, and cilantro.

Transfer to the baking dish and top with grated Monterey Jack cheese.

Bake uncovered for 20–25 minutes, or until cheese is melted and casserole is bubbly.
