4 tbsp unsalted butter, divided

1 lb Yukon Gold potatoes (about 4 medium), diced into ½-inch cubes

4 garlic cloves, minced

1 tsp dried rosemary (or 1 tbsp fresh rosemary)

1 tsp dried oregano (or 1 tbsp fresh oregano)

½ tsp kosher salt, plus extra to taste

½ tsp black pepper, plus extra to taste

1½ lbs sirloin steak, trimmed and cubed into 1-inch pieces

Instructions

Heat Skillet: Preheat a large cast-iron skillet over medium-high heat. Add olive oil and 2 tablespoons butter. Swirl to coat.

Cook Potatoes: Add potatoes in a single layer. Top with garlic, rosemary, oregano, salt, and pepper. Sear undisturbed for 4 minutes. Stir and cook 3–4 more minutes until golden and tender. Remove and set aside.

Sear Steak: Raise heat to high. Add remaining butter to skillet. Once hot, add steak cubes in a single layer. Sear for 1 minute, flip, and cook 1–2 more minutes for medium-rare.

Combine: Reduce heat to low. Return potatoes to pan and toss with steak. Adjust seasoning. Garnish with parsley if desired. Serve immediately.
