Description

This pineapple chicken and rice recipe features crispy chicken tossed in a sweet, tangy pineapple ginger sauce served over fluffy white or brown rice. It’s a tropical, one-pan dinner that’s family-friendly and easy to make in just 30 minutes.


Ingredients

1 lb chicken breast or thigh, thinly sliced

1 cup flour for coating

Salt and pepper to taste

1 cup fresh or canned pineapple chunks

1/2 cup pineapple juice

1/4 cup soy sauce

2 tablespoons brown sugar or honey

1 tablespoon grated fresh ginger

2 cloves garlic, minced

1 tablespoon cornstarch dissolved in 2 tablespoons water

2 cups cooked white or brown rice

Oil for cooking

Optional garnishes: sesame seeds, green onions, cilantro, lime wedges


Instructions

1. Season chicken with salt and pepper, then dredge in flour.

2. Heat oil in a skillet over medium-high heat.

3. Sear chicken until golden and cooked through. Set aside.

4. In the same skillet, sauté garlic and ginger until fragrant.

5. Add pineapple juice, soy sauce, and brown sugar or honey. Bring to a simmer.

6. Add pineapple chunks and stir in the cornstarch mixture.

7. Let sauce thicken, then return chicken to the skillet and toss to coat.

8. Simmer for 2-3 minutes to blend flavors.

9. Serve over cooked rice and garnish as desired.

Notes

Use fresh pineapple for a brighter flavor, or canned for convenience.

Don’t overcook the chicken—slice thin and sear just until golden.

To make it gluten-free, use GF soy sauce and flour alternatives.

Store leftovers in an airtight container in the fridge for up to 3 days.
