Description

Creamy, naturally sweet pistachio butter made with just three ingredients. Perfect for toast, smoothies, sauces, and healthy snacking.


Ingredients

2 cups (250g) shelled pistachios

1 teaspoon pistachio oil or neutral oil (optional)

Fine sea salt, to taste


Instructions

1. Preheat your oven to 325°F (160°C).

2. Spread the pistachios on a baking sheet in a single layer.

3. Roast for 5 to 10 minutes, until just fragrant. Do not over-brown.

4. Let the nuts cool slightly, then transfer to a food processor or high-speed blender.

5. Blend until crumbly, then continue processing until smooth and creamy (about 5–10 minutes).

6. Scrape the sides as needed and add oil and salt if desired.

7. Blend again until fully incorporated.

8. Transfer to an airtight glass jar and store in the refrigerator for up to 1 month.

Notes

Roasting enhances flavor and helps pistachios release natural oils.

Add oil for smoother consistency or skip it for a thicker texture.

Use slivered or blanched pistachios for quicker blending and a paler color.
