A fresh and easy strawberry glaze recipe made with real strawberries, a touch of lemon, and natural sweetness. Perfect for cheesecakes, pancakes, yogurt parfaits, and more!
Ingredients

1 lb (450g) fresh strawberries, washed and hulled

¼ cup (50g) granulated sugar (or honey for a natural option)

1 tbsp (15ml) fresh lemon juice

1 tsp (4g) cornstarch

1 tsp (5ml) vanilla extract
Instructions

Prep the Berries: Slice half the strawberries into quarters and set aside. Roughly chop the remaining strawberries.

Blend the Base: Purée the chopped strawberries in a blender or food processor until smooth.

Cook the Glaze: In a medium saucepan, whisk together the puréed strawberries, sugar, lemon juice, and cornstarch. Bring to a simmer over medium heat, stirring constantly. Cook for 3–4 minutes until thickened.

Finish with Vanilla: Remove from heat and stir in the vanilla extract.

Combine and Cool: Pour the warm glaze through a fine-mesh sieve into the bowl of sliced strawberries. Gently fold to coat the berries. Let sit for 20 minutes at room temperature or chill for 1 hour before serving.
Notes
Frozen Strawberries: You can substitute frozen berries; just thaw and drain them first.
No Cornstarch: Simmer the purée longer to thicken naturally.
Flavor Boost: Try adding a splash of balsamic vinegar or a sprig of fresh mint while simmering for extra flavor!
Storage: Keep refrigerated for up to 5 days or freeze for up to 2 months.
